1 boneless skinless chicken breast half (4 ounces), cubed1/4 cup chopped onion1 small potato, cubed1 small carrot, sliced1 cup chicken broth1 garlic clove, minced1/4 teaspoon dried tarragon, crushed1/8 teaspoon salt, optionalDash pepper2 teaspoons chopped fresh parsley
Preparation
Coat a saucepan with cooking spray; brown chicken over medium-high heat. Add the next eight ingredients; bring to a boil. Reduce heat. Cover and simmer for 20-25 minutes or until vegetables are tender. Sprinkle with parsley.
