Ingredients
1/2 cup butter, softened3/4 cup sugar2 large eggs, room temperature2 cups all-purpose flour1 teaspoon baking soda1/2 teaspoon salt1 cup buttermilk1 cup chopped pecans1 jar (10 ounces) maraschino cherries, drained and chopped1 teaspoon vanilla extract
Preparation
In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda and salt; add to the creamed mixture alternately with buttermilk. Stir in pecans, cherries and vanilla.
Pour into a greased and floured 8x4-in. loaf pan. Bake at 350° for 65-75 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.
