Ingredients
1/4 c. mayonnaise
1/2 tsp. dry mustard powder
12 oz. sharp Cheddar cheese
1 jar sliced pimentos
12 black olives
12 Spanish olives
12 slice Bread
Sliced olives for garnish (optional)
Sliced chives for garnish (optional)
Preparation
Step 1Stir the mayonnaise and dry mustard together until well blended. Add the cheese, pimentos, and olives. Stir until evenly combined. (Make sure you incorporate all of the mayo from the bottom of the bowl.)Step 2For a regular sandwich, toast the bread in the toaster and go to step 3. To make canapés, use slices of cocktail bread. Since these little guys would get lost in your toaster, lay them on the baking sheet and broil them in the oven for about 3 minutes per side, or until crisp. Turn off the oven and use the oven mitts to remove the baking sheet.Step 3Spread pimento cheese about 1⁄4 inch thick on each piece of toast. Garnish with olives and chives if you like. You can store leftover pimento cheese in a sealed container in the refrigerator for up to four days.
