Ingredients
Dough for single-crust pie1/2 cup canned pinto beans, rinsed, drained and mashed1/3 cup butter, melted1 teaspoon vanilla extract1-1/4 cups sugar1/2 cup sweetened shredded coconut, finely chopped2 eggs, lightly beaten1/2 cup chopped pecansWhipped cream, optional
Preparation
Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge.
In a large bowl, combine beans, butter and vanilla. Stir in the sugar and coconut. Add eggs; stir well. Pour into crust. Bake for 30 minutes.
Sprinkle with pecans; bake until a knife inserted in the center comes out clean but moist, 15-20 minutes. Cool on a wire rack. If desired, serve with whipped cream. Refrigerate leftovers.
