Ingredients
1 tablespoon butter2 cups cubed peeled potatoes5 ounces SPAM, finely chopped3/4 cup 2% milk1 small onion, chopped1 tablespoon minced fresh parsley1/4 teaspoon pepper1/8 teaspoon salt
Preparation
In a large skillet, melt butter over medium-high heat. Stir in the remaining ingredients. Cook and stir for 10-12 minutes or until browned and potatoes are tender.
