Ingredients

1 pound pork tenderloin, cut into 1-inch pieces1 teaspoon garlic powder2 teaspoons canola oil1 can (28 ounces) diced tomatoes4 medium carrots, cut into 1/2-inch pieces2 medium potatoes, cubed1 can (12 ounces) light or nonalcoholic beer1/4 cup quick-cooking tapioca2 bay leaves1 tablespoon Worcestershire sauce1 tablespoon honey1 teaspoon dried thyme1/4 teaspoon salt1/4 teaspoon pepper1/8 teaspoon ground nutmeg

Preparation

Sprinkle pork with garlic powder. In a large skillet, brown pork in oil; drain.

Transfer to a 4-qt. slow cooker. Add the remaining ingredients. Cover and cook on low for 7-8 hours or until meat is tender. Discard bay leaves.
