Ingredients
3/4 cup butter, softened2 cups sugar4 eggs, separated1 cup mashed potatoes1/2 cup water1 teaspoon vanilla extract2 cups all-purpose flour3 tablespoons baking cocoa2 teaspoons baking powder1 cup chopped walnuts1 can (16 ounces) chocolate frosting
Preparation
In a large bowl, cream the butter and sugar. Add the egg yolks, potatoes, water and vanilla; mix well. Combine the flour, cocoa and baking powder; add to the creamed mixture. In a small bowl; beat egg whites until stiff peaks form; fold into batter along with walnuts.
Pour into a greased 13x9-in. baking pan. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Frost with chocolate frosting.
