Ingredients

3 medium yellow summer squash, sliced3 medium zucchini, sliced1 medium red onion, chopped2 tablespoons olive oil1-1/2 cups sliced fresh mushrooms1 medium tomato, cut into wedges2 garlic cloves, mincedSalt and pepper to taste

Preparation

In a large skillet, saute the squash, zucchini and onion in oil until crisp-tender. Add the mushrooms, tomato and garlic, saute 4-5 minutes longer. Season with salt and pepper.
