Ingredients
2 tablespoons canola oil1-1/2 pounds beef top sirloin steak, cut into thin strips1 large onion, julienned1 large sweet red pepper, julienned1 garlic clove, minced1/2 cup reduced-sodium beef broth2 tablespoons lemon juice1-1/2 teaspoons ground cumin1 teaspoon seasoned salt1/2 teaspoon chili powder1/4 to 1/2 teaspoon crushed red pepper flakes12 mini flour tortillas (5 inches), warmedOptional toppings: Shredded cheddar cheese, fresh cilantro leaves, sliced jalapeno pepper and avocado
Preparation
Select saute or browning setting on a 6-qt. electric pressure cooker. Adjust for medium heat; add oil. When oil is hot, brown beef. Press cancel. Place onions, peppers and garlic on meat. Top with broth, lemon juice and seasonings.
Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Quick-release pressure. Press cancel. Using tongs, serve with tortillas and toppings as desired.
