Ingredients
1 package (12 ounces) fresh or 3 cups frozen cranberries2/3 cup packed brown sugar1/4 cup thawed orange juice concentrate2 tablespoons raspberry vinegar1/2 cup chopped dried apricots1/2 cup golden raisins1/2 cup chopped walnuts, toasted
Preparation
In a 6-qt. electric pressure cooker, combine cranberries, brown sugar, orange juice concentrate and vinegar. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 3 minutes. Let pressure release naturally for 5 minutes; quick-release any remaining pressure.
Stir in apricots, raisins and walnuts. Refrigerate leftovers.
