Ingredients
2 pounds lean boneless pork, cut into 1-1/2 inch cubes1 tablespoon vegetable oil3 cans (12 ounces each) whole kernel corn, drained2 celery ribs, chopped2 medium potatoes, peeled and chopped2 medium tomatoes, coarsely chopped3 cans (4 ounces each) chopped green chilies4 cups chicken broth2 teaspoons ground cumin1 teaspoon dried oregano1 teaspoon salt, optional
Preparation
In a large Dutch oven, brown half of the pork at a time in oil. Add remaining ingredients. Cover and simmer for 1 hour or until pork is tender.
