Ingredients

3 cans (15 ounces each) pumpkin2 cups sugar1-1/2 cups water3 tablespoons lemon juice1 tablespoon grated lemon zest3 teaspoons ground cinnamon3/4 teaspoon salt3/4 teaspoon ground nutmeg3/4 teaspoon ground ginger

Preparation

In a large saucepan, combine all ingredients. Bring to a boil, stirring frequently. Reduce heat; cover and simmer for 20 minutes to allow flavors to blend.

Cool. Spoon into jars. Cover and store in the refrigerator for up to 3 weeks.
