Ingredients

1 cup water1 cup vanilla soy milk1 cup old-fashioned oats1/2 cup canned pumpkin1/4 teaspoon pumpkin pie spice2 tablespoons sugar1/4 teaspoon vanilla extractOptional: Dried cranberries and salted pumpkin seeds or pepitas

Preparation

In a small saucepan, combine the water, milk, oats, pumpkin and pie spice. Bring to a boil; cook and stir for 5 minutes.

Remove from the heat; stir in sugar and vanilla. If desired, sprinkle with cranberries and pumpkin seeds; drizzle with additional milk.
