Ingredients

1 cup water1/2 cup quinoa, rinsed1/4 cup balsamic vinegar1 teaspoon vanilla extract1/4 teaspoon ground cinnamon1/8 teaspoon salt1/4 cup honey8 fresh figs, quartered1 cup (8 ounces) vanilla yogurt

Preparation

In a small saucepan, bring water to a boil. Add quinoa. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Remove from heat; fluff with a fork.

Meanwhile, place vinegar in a small saucepan. Bring to a boil; cook 1-2 minutes or until liquid is reduced by half.

In a small bowl, mix cooked quinoa, vanilla, cinnamon and salt. Layer half the quinoa mixture, half the honey, the balsamic vinegar, half the figs and half the yogurt into 4 parfait glasses. Top with remaining quinoa mixture, honey, yogurt and figs.
