Ingredients
1 package cream cheese
1 can crushed pineapple
1/4 c. walnut pieces (optional— I like the extra crunch, but you may prefer a smoother texture.)
1/4 tsp. ground cinnamon
1/2 c. peanut butter (You don’t really need to measure it.)
12 slice raisin bread
1 apple
Preparation
Step 1Put the softened cream cheese, pineapple, walnuts, and cinnamon in the mixing bowl. Stir and mash until well combined.Step 2Spread a thin layer of peanut butter on 8 of the slices of raisin toast. The key to this sandwich is spreading the peanut butter on the toast while the bread is still warm enough to slightly melt the peanut butter. Divide the cream cheese mixture among the remaining four slices of toast, and spread it in an even layer.Step 3Construct your triple-decker sandwiches: Each one starts with a cream-cheesed toast base, then a peanut-butter-side-up piece of toast, a layer of sliced apples, and finally a peanut-butter-side-down piece of toast. If you want, cut the sandwiches into triangles. Yum-o.
