Ingredients
1 cup butter, softened1 cup sugar1 large egg, room temperature1 cup mashed sweet potato1 teaspoon vanilla extract2 cups all-purpose flour1 teaspoon baking powder1 teaspoon ground cinnamon1/2 teaspoon baking soda1/2 teaspoon salt1/2 teaspoon ground allspice1 cup chopped pecans1 cup raisins
Preparation
Preheat oven to 375°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the egg, sweet potato and vanilla. Combine the flour, baking powder, cinnamon, baking soda, salt and allspice; gradually add to creamed mixture and mix well. Fold in pecans and raisins.
Drop by tablespoonfuls 1 in. apart onto ungreased baking sheets. Bake until edges begin to brown, 10-12 minutes. Cool 1 minute before removing to wire racks to cool completely. Store in an airtight container.
