Ingredients
6 skim mozzarella sticks
1 c. panko bread crumbs
1 tbsp. extra-virgin olive oil
1 tbsp. Hidden Valley Ranch Seasoning & Salad Dressing Mix
2 large eggs, well beaten
3 tbsp. all-purpose flour
1/2 c. warm marinara
1/4 c. Hidden Valley Ranch Dressing
Preparation
Step 1Freeze mozzarella sticks until frozen solid, at least 2 hours.Step 2Meanwhile, preheat oven to 350°. On a small rimmed baking sheet, toss the panko with the oil, breaking up some of the panko with your hands to a finer texture. Bake, stirring halfway through, until lightly golden, about 12 minutes. Turn off oven and let panko cool. Step 3When ready to bread, preheat the oven to 400°. Set up a breading station: In a shallow bowl, whisk together cooled panko and ranch seasoning; in another bowl, add eggs; and in another bowl, add flour.Step 4Coat frozen mozzarella sticks in flour, then dip in egg, then panko, repeat with egg, and repeat with panko. Arrange on a baking sheet.Step 5Bake for 8 to 10 minutes, watching carefully so the cheese doesn’t ooze. Serve with warm marinara sauce and ranch dressing for dipping.
