Ingredients

1 tablespoon canola oil1 medium green pepper, diced1 medium onion, chopped2 garlic cloves, minced2 cans (16 ounces each) kidney beans, rinsed and drained1/2 pound smoked turkey sausage, sliced1 teaspoon Cajun seasoning1/8 teaspoon hot pepper sauce3/4 cup waterHot cooked rice, optional

Preparation

In a large saucepan, heat oil over medium heat; saute pepper and onion until tender. Add garlic; cook and stir 1 minute.

Stir in beans, sausage, Cajun seasoning, pepper sauce and water; bring to a boil. Reduce heat; simmer, uncovered, until heated through, 5-7 minutes. If desired, serve with rice.
