Ingredients
3 tbsp. butter
3 tbsp. all-purpose flour
1/2 tsp. smoked paprika
1 c. beer, such as Guinness
1 c. milk
2 c. shredded cheddar
1 c. shredded Swiss cheese
1 tbsp. horseradish
Kosher salt
Freshly ground black pepper
1 large bag pita chips
1/2 lb. deli corned beef, chopped into bite-size pieces
1/2 c. sauerkraut
1/4 c. freshly chopped chives, for garnish
Preparation
Step 1Make cheese sauce: In a large saucepan over medium heat, melt butter. Whisk in flour and paprika. Cook 1 minute. Slowly add beer and milk to flour mixture, stirring constantly. Continue whisking over medium heat until mixture has thickened, about 3 minutes. Remove from heat and stir in cheeses until fully melted. Stir in horseradish and season with salt and pepper.Step 2Assemble nachos: Spread an even layer of pita chips on your serving tray. Scatter with half the corned beef and half the sauerkraut. Pour half the cheese sauce over nachos, then top with another layer using remaining ingredients. Garnish with chives and serve.
