Ingredients
2 tablespoons olive oil1 small onion, finely chopped1 cup uncooked jasmine rice1-1/2 cups water1/4 cup chopped dried apples1/4 cup golden raisins1 teaspoon salt1/4 teaspoon ground allspice1/4 teaspoon ground cinnamon1/4 teaspoon dried thyme1/8 teaspoon cayenne pepper
Preparation
In a large saucepan, heat oil over medium heat; saute onion until tender, 4-6 minutes. Add rice; cook and stir until lightly browned, 4-6 minutes.
Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, 15-20 minutes. Fluff with a fork.
