Ingredients
1 cup chopped onion1 teaspoon olive oil1-1/2 cups uncooked long grain rice2 cups chicken or vegetable broth2 cups water1 package (10 ounces) fresh spinach, torn1/2 teaspoon salt1/8 teaspoon pepper1/4 cup shredded Parmesan cheese
Preparation
In a large saucepan, saute onion in oil until tender. Add rice; cook and stir for 2 minutes. Add broth and water; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Stir in the spinach, salt and pepper; cook until spinach is wilted.
Transfer to a 2-qt. baking dish coated with cooking spray. Sprinkle with Parmesan cheese. Cover and bake at 375° for 20-25 minutes or until rice is tender.
