Ingredients
1 1/2 c. stale bread crumbs
1 stalk celery
1 small white onion
2 tsp. finely chopped fresh sage leaves
1 tbsp. finely chopped fresh flat-leaf parsley
1 egg
2 tbsp. butter
1 whole Chicken

Preparation
Step 1Preheat oven to 400 degrees F or 350 degrees F fan-forced.Step 2Make herb stuffing: Combine ingredients in medium bowl.Step 3Remove and discard any fat from cavity of chicken. Rinse chicken inside and out with water. Pat dry cavity and skin with absorbent paper. Fill cavity of chicken with stuffing, fold over skin to enclose stuffing; secure with toothpicks. Tie legs together with kitchen string.Step 4Place chicken on greased rack in large baking dish. Half-fill dish with water — it should not touch the chicken. Brush chicken with butter; roast 15 minutes.Step 5Reduce oven to 350 degrees F or 320 degrees F fan-forced. Bake for another 1 1/2 hours or until chicken is cooked through, basting occasionally with pan juices. Stand 10 minutes before breaking or cutting into serving-sized pieces.
