Ingredients

2/3 cup water1/2 cup olive oil3 tablespoons lemon juice4 garlic cloves, minced2 teaspoons dried oregano1 teaspoon salt1/2 teaspoon pepper3 pounds Yukon Gold potatoes (about 6 medium), each cut into eight wedges3/4 cup crumbled feta cheese

Preparation

Preheat oven to 450°. In a small bowl, whisk the first seven ingredients. Arrange potatoes evenly in a shallow roasting pan. Pour water mixture over top.

Roast until potatoes are golden brown and tender, 40-50 minutes. Sprinkle with cheese.
