Ingredients

4 small sweet potatoes, peeled and cut into 1-inch cubes1 large onion, cut into eight wedges2 tablespoons olive oil1/2 teaspoon salt1/2 teaspoon pepper1/4 teaspoon garlic powderBALSAMIC VINAIGRETTE:1/3 cup olive oil2 tablespoons balsamic vinegar1 teaspoon maple syrup1 garlic clove, minced1/2 teaspoon grated lemon zest1/2 teaspoon minced chives1/2 teaspoon minced fresh marjoram1/4 teaspoon salt

Preparation

In a large bowl, toss the sweet potatoes, onion, oil, salt, pepper and garlic powder. Transfer to a greased 15x10x1-in. baking pan. Bake at 425° for 35-40 minutes or until potatoes are tender.

In a small bowl, whisk the vinaigrette ingredients. Drizzle over potato mixture; toss to coat. Serve immediately.
