Ingredients
1 c. all-purpose flour
1/2 c. chopped walnuts
1 tbsp. finely chopped fresh rosemary
1/2 tsp. salt
pinch cayenne pepper
pinch Freshly ground black pepper
1 stick butter
1 1/2 c. freshly grated Parmesan cheese (6 ounces)
Preparation
Step 1In a large bowl, stir together the flour, walnuts, rosemary, salt, and peppers.Step 2With a mixer on medium-high speed, cream butter in a medium bowl until light and fluffy, about 3 minutes. Add cheese and beat on low speed until well combined. Add the flour mixture and beat just until blended.Step 3Divide the dough into 2 pieces and roll each piece into a 1 1/2 inch- diameter log. Wrap each log in plastic wrap and refrigerate at least 30 minutes, or until easy to slice.Step 4Preheat the oven to 350 degrees. Grease 2 large baking sheets.Step 5Cut the logs crosswise into 3/8-inch-thick slices and place flat on baking sheets. Bake 12 to 15 minutes, or until golden brown. Transfer to wire racks to cool.
