Ingredients

8 oz. butter

16 oz. all purpose flour

2 oz. granulated sugar

2 egg whites

1 egg yolk

Preparation

Step 1Place 2 1/2 ounces of butter, the flour and the sugar in the bowl of a food processor fitted with the metal blade. Pulse to combine until the mixture resembles coarse cornmeal, about 10 to 12 pulses.Step 2In a separate bowl, beat the egg whites to soft peaks. Add the egg whites and the egg yolk to the food processor and pulse to combine.Step 3Turn the dough out onto a lightly floured surface and pat into a rectangle about 8 by 12 inches. Spread the remaining butter over the top two-thirds of the rectangle. Fold the bottom third of the dough (the unbuttered part) up like a business letter, and then fold the top third (with butter) down. Rotate the dough 90 degrees and, with a rolling pin, roll the dough into a rectangle about 10 by 14 inches. Repeat the “business letter” folding of the dough (with adding any additional butter). Wrap the dough in plastic and chill for 30 minutes.Step 4Remove the dough from the refrigerator and roll it into a rectangle about 10 by 14 inches. Fold once more business letter style and cut the dough in half.
