Ingredients

2 1/2 c. flour

1 1/2 c. graham crackers, crushed

1 tsp. baking soda

1/2 tsp. kosher salt

1 c. butter, softened

2/3 c. brown sugar

1/3 c. sugar

2 large eggs

1 1/2 tsp. pure vanilla extract

6 full-size chocolate bars (like Hershey’s)

1 container marshmallow crème

1 c. mini marshmallows

Preparation

Step 1Preheat the oven to 350° and grease the bottom and sides of a 9"-x-9" square baking dish with butter.Step 2As the oven heats, mix flour, graham crackers, baking soda, and salt in a mixing bowl. Set aside.Step 3Grab a larger mixing bowl and add in butter and sugars, beating on medium speed until the mixture is light and fluffy. Mix in eggs and vanilla, then reduce mixer speed to low and gradually add in flour mixture, stirring just enough to combine.Step 4Pour half of the cookie dough into the baking dish, top with a layer of chocolate, then spoon on marshmallow crème, using the back of a silicone spatula or a spoon to spread on an even layer.Step 5Roll out remaining cookie dough and place on top of the marshmallow crème. Bake for 23 to 25 minutes, or until cookie is lightly golden. Remove bars, then heat broiler. Sprinkle marshmallows and any remaining pieces of chocolate on top, then broil for 30 seconds, until marshmallows are lightly toasted.
